Candied Sweet Potatoe and Peaches

I tried this tonight and it was a hit! My husband actually ate it, and if anyone knows C they know he is a very picky eater!  I served this with Rosemary Chicken as well as sweet corn.  Delicious!

Ingredients:

1-2 Sweet Potatoes
1 can of halved peaches
2 tablespoons of brown sugar
1/4 cup of walnuts


Directions:

*preheat oven to 400

1.  Scrub Sweet Potatoes and slice. 
2. Mix Brown Sugar, Walnuts and Sweet Potatoes and place in a well greased dish with 3 tbsp of water
3. Cook Sweet potatoes for 20 minutes
4. Add Peaches on top of sweet potatoes and cook for an additional 15 minutes

Loaded Potato and Buffalo Chicken Casserole



This morning I seen this delicious recipe posted somewhere on facebook.  I did make changes to it, as I knew that much hot sauce and pepper was going to kill me!!!  So within the brackets are my substitutions :)
Enjoy!

2 pounds boneless chicken breasts, cubed (1")
8-10 medium potatoes, cut in 1/2" cubes
1/3 cup olive oil
1&1/2 tsp salt
1 Tbsp. black pepper (2 tsp)
1 Tbsp. paprika
2 Tbsp. garlic powder
6 Tbsp. hot sauce (1-2 tbsp)
(chopped pepper and onion)

Topping:
2 cups fiesta blend cheese
1 cup crumbled bacon - cook first :)
1 cup diced green onion

Preheat oven to 500 degrees. Spray a 9X13" baking dish with cooking spray. In a large bowl mix together the olive oil, salt, pepper, paprika, garlic powder and hot sauce. Add the cubed potatoes and stir to coat. Carefully scoop the potatoes into the prepared baking dish, leaving behind as much of the olive oil/hot sauce mixture as possible. Bake the potatoes for 45-50 minutes, stirring every 10-15 minutes, until cooked through and crispy and browned on the outside. While the potatoes are cooking, add the cubed chicken to the bowl with the left over olive oil/hot sauce mixture and stir to coat. Once the potatoes are fully cooked, remove from the oven and lower the oven temperature to 400 degrees. Top the cooked potatoes with the raw marinated chicken. In a bowl ix together the cheese, bacon and green onion and top the raw chicken with the cheese mixture. Return the casserole to the oven and bake for 15 minutes or until chicken is cooked through and the topping is bubbly delicious.
Serve with extra hot sauce and/or ranch dressing.

Whole Grain Banana Bread - Crockpot

Hello readers!! 

Here is another Crock-Pot Tuesday recipe.  This bread is very moist and delicious!!  Enjoy!!


Ingredients:

1/4 cup plus 2 tablespoons wheat germ, divided
2/3 cup of butter,softened
1 cup sugar
2 eggs
1 cup mashed bananas (2 to 3 bananas)
1 teaspoon vanilla
1 cup all-purpose flour
1 cup whole wheat pastry flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped walnuts or pecans (optional)


Directions:

  1. Spray 1-quart casserole, souffle dish or other high-sided baking pan with nonstick cooking spray.  Sprinkle dish with  2 tablespoons wheat germ.
  2.  Beat butter and sugar in large owl with electric mixer until fluffy.  Add eggs, one at a time; beat until blended.  Add bananas and vanilla; beat until smooth.
  3. Gradually stir in flours, remaining 1/4 cup wheat germ, baking soda and salt.  Stir in nuts, if desired.  Pour batter into prepared dish; lace in 4 1/2 quart crock pot.  Cover; cook on LOW 4 to 6 hours on HIGH for 2-3 hours or until edges begin to brown and toothpick inserted into centre comes out clean.
  4.  Remove dish from Crock Pot.  Cool n wire rack about 10 minutes. Remove bread from dish; cool completely on wire rack.

Chicken 'N' Dumplins - Crockpot

Good afternoon readers!! I hope you all are staying warm in this -20 weather!!  This delicious dinner is sure to warm your tummy's and your hearts!!  A pretty simplistic meal, which also is a good way to get rid of the already cooked chicken you might have in your freezer!!  (When I cook a whole chicken and I have left overs, I portion cut chicken into freezer bags so I have left overs for recipies such as this and pot pies)

 Ingredients: 

2 cups cooked chicken
1 can of condensed cream of mushroom soup - undiluted
1 can of condensed cream of chicken soup - undiluted
2 cans cup of water
4 teaspoons all-purpose flour
2 teaspoons chicken boullion granules
1/2 easpoon black pepper
1 can pillsbury biscuits (10 biscuits)

Directions:

1. Mix all ingredients except biscuits in your crock pot.

2. Cut biscuits into quarters and gently stir into mixture.  Cover; cook on low 4-6 hours.

Melting Moment Cookies

The most easiest cookies ever!!!!   I've always loved these when visiting my mother in laws house!! She used to make them frequently when her son and I were dating.   Last month, I sat down at her kitchen table and copied some of her favorite dishes and managed to sneak this one in too!!!  You literally will be amazed at how easy this is!!  Five ingredients!!!

Ingredients:

1 cup flour
2 table spoons of cornstarch
1/2 cup of sugar
1 cup softened butter or margarine
1 cup flaked, sweetened coconut

Directions:

Stir flour, cornstarch, and sugar together.  Add in butter/margarine until mixture is smooth.  Cover and chill if needed to make dough more pliable to roll into balls.  Take dough and roll into small balls and roll in coconut.  Place on cookie sheet, and bake at 300 degrees for 20 minutes or until they have a hint of golden brown.

Easy Peasy Meatloaf

I must admit, I have never in my life had I had meatloaf.  Growing up, I had only heard horror stories from my friends.  "We had meatloaf last night YUCK!" I started doing a bit of research on this dish.  Looking through recipe's on the web as well in some old dusty cook books.  Finding similarities in most I decided to try whipping up my own!

INGREDIENTS:

2 eggs beat lightly wit a fork
2/3 cup of milk
1/4 tsp pepper
2 tsp salt
3 slices fresh bread crumbled
1 onion chopped
1/2 raw carrot chopped fine
1/2 celery stalk chopped
1 cup shredded cheddar cheese
1 1/2 lbs lean ground beef

SAUCE - this is what I thought might be gross but turned out AMAZING!

1/4 cups brown sugar
1/4 cup ketchup or chili sauce or both
1 tbsp prepared mustard

DIRECTIONS:

Preheat oven to 350 degrees.

1.  Beat eggs in large bowl, add milk, salt, pepper and crumbled bread.  Beat until bread is moist.
2. Add onion, carrot, celery, cheese and ground beef mixing well
3. Pack into 9 x 5" loaf pan
4. Combine brown sugar, ketchup, chili sauce & mustard, spread evenly over loaf
5. Bake for 1 hour (watch if smaller pans) and let stand for 10 minutes, remove from pan.
